The original Jimboy's Tacos was a 16-foot trailer on Kings Beach in Lake Tahoe, CA, launched in 1954 by Jim "Jimboy" Knudson and his wife, Margaret. It served as a summer food destination, featuring the signature Parmesan-dusted tacos. The trailer operated until a permanent location opened in 1958.
